1 large onion, diced
olive oil
1 large can of tuna ('Sirena' brand tuna in oil is really nice)
mushrooms (enough for 4 people-be generous because they shrink), sliced
2 tbspns tomato paste
1 x 300 ml carton cream (not thickened)
parsley
500g pasta (spiral pasta goes well with this)
parmesan cheese
Fry onion in olive oil in a large pan until soft. Drain tuna, add to onion and cook for
several minutes. Add mushrooms and tomato paste and cook for a few more minutes.
Add cream and parsley and simmer for about 5-10 minutes (until mushrooms are
cooked).
While you are doing this, get the pasta on the boil and cook until al dente. Mix sauce into
pasta and serve with parmesan cheese.
This dish is good as leftovers too.
