Macaroni Cheese

500g packet macaroni

1 tablespoon oil

4 bacon rashers, chopped

1 small onion, finely chopped

2 cups (200 g) grated tasty cheese

1 teaspoon french mustard

2 tablespoons chopped parsley

1 quantity White Sauce

1/2 cup grated parmesan cheese

Place macaroni in pan of boiling water; boil rapidly covered for about 10 minutes or until macaroni is just tender; drain. Cooking time will depend on the age and type of macaroni, and how you prefer it. Place macaroni in oven proof dish.

Heat oil in pan, add bacon and onion, cook stirring a minute or two, or until onion is soft (or combine oil, bacon and onion in a bowl, microwave on HIGH for about four minutes or until onion is soft); stir through the macaroni. Add tasty cheese, mustard and parsley to hot White Sauce, stir with wooden spoon until cheese is melted. Pour Sauce over macaroni, mix through lightly. Sprinkle with parmesan cheese, bake uncovered in moderate oven 20 minutes or until cheese is golden brown.
