Cheesy Meatloaf

1 tblspn oil

1 onion, finely chopped

1 kg minced beef

1 cup rice, cooked

1/2 cup tomato paste

2 eggs

1 cup grated carrot

1/2 tsp mixed herbs

salt and pepper

1/2 cup grated cheese for sprinkling

Heat oil in a heavy base frying pan, add onion and cook over moderate heat until onion softens slightly, about 3 minutes. Remove from pan and drain on absorbent paper. Place mince, onion, rice, tomato paste, eggs, carrot, mixed herbs and salt and pepper in a large bowl and stir until well mixed. Spoon into a grease 25cm x 15cm loaf tin, pressing the mixture evenly into the tin.

Cover tin with foil and cook in a moderate oven (180C) for 1 to 1 1/4 hours or until the juices run clear when loaf is pierced with a knife. Remove from the oven, pour off excess liquid, sprinkle with grated chese, return to the oven and cook for a further 15 minutes or until the cheese has melted.
